Nachos with Turkey Chili

Fridays are great for lounging around and celebrating the week’s end with a happy hour. Certainly the motivation to make dinner is not always at its best. My husband and I decided to have our own happy hour with homemade nachos. I knew we wouldn’t use all the chili on the hotdogs from a previous dinner this week, so I planned to use the leftovers in making these nachos. This is a very basic recipe as far as ingredients go, but feel free to add your own special touches when it comes to toppings. Nachos + Beer = Great Friday Night!

Time: 20 minutes
Servings: 2-3 (since this was our dinner, my husband and I both ate a lot :))

1/2 bag of tortilla chips
2-3 cups sharp cheddar cheese, shredded
1-2 cups of turkey chili, recipe HERE
sour cream

1. Preheat oven to 350.
2. I used leftover chili so at this point, I placed the chili in a medium saucepan over medium low heat to warm through.
3. In a 9×13 baking dish, place a single layer of chips on the bottom. Sprinkle with cheese, enough to mostly cover chips. Put another layer of chips on top and sprinkle with more cheese. I put a third layer of chips and cheese, but this was also our dinner. Feel free to modify and only do 2 layers if you are only using for a snack or appetizer.
4. Bake in the oven about 10 minutes or until cheese is melted.
5. Take out of oven and place chili on top. Finish with whatever fabulous toppings you would like: lettuce, tomato, onion, jalapenos, olives, etc. Serve with sour cream and salsa on the side. Remember to be careful, as the dish will be hot!
