These potatoes are done right in the microwave. They are quick and easy and come out just as if they were baked for an hour in the oven. Try them and see what you think.
3-4 medium sized Sweet Potatoes, scrubbed clean
2-3 Tablespoons Brown Sugar
3-4 Tablespoons butter, room temperature
1. Place sweet potatoes on a microwave safe plate and stab each one 3-4 times with a fork to vent steam.
2. Place in microwave on medium power for 5 minutes.
3. Rotate potatoes and place in microwave on medium power for another 4-5 minutes. Potatoes are fully cooked when a knife cut into the potato comes out easily without sticking.
4. Slice the potato lengthwise and serve with some brown sugar and butter on each.
