Roasted Rosemary Parmesan Potatoes


I love roasting vegetables. The brown crispy edges gives them so much more flavor. So potatoes are no exception. Add a little fresh rosemary from my herb garden and parmesan cheese (because I love anything cheesy) and you get this delicious side dish. So easy to throw together and only a half hour in the oven, and your side dish is done. Enjoy!




Total Time: 40 minutes
Servings: 4

Cooking spray
4 medium white potatoes
1/4 cup olive oil
4 sprigs of fresh rosemary
Salt and pepper
1/4 cup parmesan cheese, grated

1. Preheat oven to 400. Spray baking sheet with cooking spray to prevent sticking and place in oven while preheating.

2. Cut potatoes into about 1-inch cubes and put into a large bowl. Remove leaves from rosemary, chop and add to potatoes. Drizzle with olive oil and season generously with salt and pepper.

3. When oven has preheated, carefully remove baking sheet with oven mitt and place potatoes on pan. It may sizzle a little as the olive oil touches the hot pan. Bake in the oven for 20 minutes.

4. Remove from oven. Stir and sprinkle on parmesan cheese. Bake another 10 minutes until potatoes are golden brown and cooked. Serve hot.
