Roasted Parmesan Broccoli

I love roasted vegetables. I’m not one to eat all my greens off my plate, but when I roast them, I always do. When you roast broccoli, it cooks through but still has a soft crunch. It never gets mushy and the little edges crisp up nice and brown to give it great flavor. The cheese lover in my sprinkles a little parmesan cheese on top at the end and you have an easy, fresh, and delicious side dish.

Total Time: 20 minutes
Servings: 4

Ingredients:
1 large head of broccoli, stalks removed and chopped
Olive oil
Salt and pepper
Parmesan Cheese, grated

Directions:
1. Preheat oven to 400. Cover a baking sheet with foil, if you desire, for easy clean up. Spread the broccoli in a single layer on the baking sheet. Drizzle olive oil over the top then sprinkle lightly with salt and pepper to season. Toss to coat all the pieces.
2. Bake for 15-20 minutes until the broccoli starts to brown. Remove from oven and sprinkle with parmesan cheese.
