Broccoli and cheddar are such a great combination. Throw in some orzo pasta and you have yourself one tasty little side dish. Freshly grating your own cheddar cheese really is a key ingredient, as freshly grated cheese will melt better than the already shredded cheese found in the bag. I simply use my food processor to shred my cheese so I don’t kill my arm. It takes seconds, literally. However, if you are on a time crunch, the bag of pre-shredded is a great alternative (I have used it in a time crunch, as I’m sure many of us have). What is great about this dish also is that it is a one pot side dish. The orzo and broccoli boil in the same pot of water and then you mix all other ingredients in that same pot, after it has been drained. Simple and delicious, I know you will enjoy this Broccoli Cheddar Orzo.

Broccoli-Cheddar-Orzo

Total Time: 20 minutes
Servings: 4

Ingredients:
1 cup orzo pasta
1 bunch of fresh broccoli, stalks removed and chopped (about 2 cups)
1 cup sharp cheddar cheese, shredded
1/2 cup parmesan cheese, grated
1/4 cup milk
1/8 teaspoon nutmeg
Salt and pepper, to taste

Directions:
1. Bring a medium pot of water to a boil. Once boiling add salt to flavor the cooking water. Add the orzo and cook for 5 minutes, stirring occasionally. Add the broccoli to the pot of water and cook for another 5 minutes, continuing to stir occasionally. Drain and return pasta and broccoli to pot.

2. Add remaining ingredients and stir until the cheeses have melted. Serve hot.
