Tortellini and Sausage


Tortellini… one of my favs! Creamy cheesey tortellini dressed with a delicious tomato sauce and spicy sausage… what a great and easy dinner. Serve with some warm Italian bread and a glass of wine and you have a nice relaxing night ahead of you ­čÖé


Total Time: 40 minutes
Servings: 4-6

1 (10 ounce) package cheese tortellini, frozen or fresh
1 Tablespoon olive oil
4-5 sausage links, hot or sweet
2 cups tomato sauce, recipe here
Parmesan cheese, grated

1. Bring a large pot of water to a boil. When boiling add a generous amount of salt, then add the tortellini. Cook according to package for al dente.

2. Meanwhile, in a large skillet, heat olive oil over medium heat. Add the sausage and cook about 4-5 minutes per side until cooked through. Remove from pan and let rest.

3. Add the tomato sauce to the large skillet and warm through. Slice the sausage and add to the tomato sauce. When tortellini is finished cooking drain and add to skillet with sausage and tomato sauce. Gently stir to coat pasta with sauce.

4. Serve with grated parmesan cheese on top.
