This recipe came from one I saw on Pinterest awhile back. It is called Slow Cooker Salsa Chicken from Mostly Homemade Mom. (This is also another great blog and highly recommend checking it out.) I knew this week I was going to be late with Back to School Night, so I wanted a crock pot meal that my husband and I could both enjoy warm for whenever we each got home. This was a great one! This chicken can be served over warm soft tortillas, served over tortilla chips as chicken nachos, or even eaten all by itself. It has so much flavor and can be served so many different ways. So pick your favorite and enjoy!
Total Time: 8 hours (low), 4 hours (high)
4 boneless, skinless chicken breasts
1 packet taco seasoning
1 cup picante sauce (we used medium heat because we like it spicier)
1 can condensed cream of chicken soup
1/2 cup sour cream
4-6 tortillas, warmed
lettuce, for topping (optional)
tomato, chopped for topping (optional)
1. Place chicken in bottom of crock pot. Sprinkle with taco seasoning packet.
2. In a small bowl, mix together picante sauce and soup. Pour over chicken. Cook on low 8 hours, or high 4 hours.
3. Using two forks, shred the chicken. Stir in the sour cream and serve over warm tortillas with toppings of your choice.
