Parmesan Italian Baked Chicken


When in the need for a quick and tasty meal, this chicken does the trick. It is extremely simple to throw together and cooks in no time at all. This chicken is tender and flavorful and there are so few ingredients needed. Serve with some broccoli cheddar orzo and you will have thrown together dinner in under 30 minutes.

Servings: 4

cooking spray
1 cup grated parmesan cheese
1 cup Italian seasoned panko bread crumbs
1 packet Good Seasons dry Italian dressing mix
3 boneless chicken breasts, trimmed and cut lengthwise
2 Tablespoons olive oil

1. Preheat oven to 400. Cover a rimmed baking sheet with aluminum foil and spray with cooking spray.

2. Combine the parmesan cheese, bread crumbs, and Italian dressing mix packet in a shallow dish. Run each chicken breast under water, then place in bread crumb mixture and press onto both sides of chicken. Place chicken on baking sheet and repeat with remaining chicken breasts.

3. Drizzle olive oil over the top of the chicken. Bake 20 minutes. The chicken is nice and thin so should not take long to cook. Remove from oven and let rest 5 minutes before serving.
