Chicken Kiev with Egg Noodles

This is a family favorite that my mom used to make weekly for us kids. It was one of my favorite dishes growing up and still is. The breaded chicken forms a nice crust on the outside while inside the Monterey jack cheese melts and oozes out the sides. The Italian seasoning on the inside gives just a touch of flavor and served over egg noodles, it is one delicious meal. The best part is that it cooks in only 20 minutes. Enjoy!

Total Time: 30 minutes
Servings: 4-6

Ingredients:
3 boneless chicken breasts, cut lengthwise
6 ounces Monterey jack cheese
About 1 Tablespoon Italian seasoning
6 Tablespoons butter, melted
1 cup Italian seasoned bread crumbs
1 cup grated parmesan cheese
6 ounces egg noodles, cooked according to package
Toothpicks

Directions:
1. Preheat the oven to 375.

2. Cut the cheese into 6 rectangular pieces, about an ounce a slice. Place one piece of cheese in the middle of each chicken breast. Sprinkle with about a 1/2 teaspoon of Italian seasoning. Roll up the chicken and secure with a toothpick.

3. Mix together bread crumbs and parmesan cheese in a shallow dish. Have melted butter in a bowl along side the bread crumb mixture. Dip the rolled and secured chicken into the butter and then into the bread crumb mixture, rolling chicken around to make sure all sides are covered. Place the piece of chicken on a baking dish and repeat with remaining pieces. Pour remaining melted butter on top of the chicken.

4. Bake for 20 minutes or until cheese is melted and chicken is cooked through and no longer pink inside. Serve over egg noodles.
