Chicken Caesar Salad

When my husband and I feel that we have had a weekend of too much food and adult beverages, we will have “salads” for dinner in the coming week. That was the case this past week. Our “salads,” however, could be slightly healthier with a different choice of dressings, but Caesar is just oh so good. It is my favorite dressing on salad and husband enjoys it as well, bonus. So when we have “salads,” we are talking about chicken Caesar salads. Nothing terribly special here, especially since we use bottled dressing, but the creaminess of the Wishbone Creamy Caesar dressing cannot be denied. Salads can be (somewhat) healthy and delicious too!

Total Time: 20 minutes
Servings: 4

Ingredients:
4 boneless chicken breasts
Salt and pepper, to taste
Garlic Powder
1 head of Romaine lettuce, cleaned and chopped
Croutons
Grated Parmesan cheese
Caesar Dressing

Directions:
1. Preheat a non-stick skillet on medium high heat. Spray with cooking spray. Season both sides of the chicken with salt, pepper and garlic powder. Cook until no longer pink inside, about 4-5 minutes per side. Let rest for 5 minutes.

2. While the chicken is resting, place lettuce into serving bowls. Place a handful of croutons on top followed by a sprinkle of parmesan cheese. Slice chicken against the grain in 1 inch strips and lay on top of salad.

3. Top with dressing and enjoy!
