Buffalo Chicken Salad


My husband and I have been mixing in salads here and there into the menu for a healthy option. Instead of doing our usual Chicken Caesar Salad, I decided to change it up a bit. Instead, I cooked some chicken in hot sauce to make them buffalo style and serve it with a salad of lettuce, celery, carrots and, of course, cheese. Pick a dressing of your choice (I like ranch, but my husband likes blue cheese) and eat up!



Total Time: 20 minutes
Servings: 3-4

3 boneless chicken breasts, trimmed and cut into tenders
1/4 cup hot sauce
2 Tablespoons olive oil
cooking spray
1 head lettuce, cleaned
2 celery stalks, chopped
2 carrots, shredded
1 cup cheddar cheese, grated
dressing of your choice

1. Preheat broiler to HIGH. Place chicken in a bowl and add hot sauce and olive oil. Toss to coat.

2. Line a baking sheet with foil and spray with nonstick cooking spray. Place chicken onto baking sheet and cook about 8-10 inches under broiler about 5-7 minutes. Remove from oven, flip chicken and place under broiler for another 5-7 minutes. Remove from oven and let rest 5 minutes.

3. While chicken is cooking, place lettuce, celery, carrots and cheese in large bowl and toss together.

4. Serve chicken over salad with your choice of dressing. I like ranch, but my husband enjoys blue cheese. Take your pick!
