Meatball Sandwiches


When I make a pot of sauce and a batch of meatballs, I always make extra. Extra meatballs are great for sandwiches. A few hot meatballs, some melted cheese, a nice toasted roll and you have yourself one delicious leftover sandwich. Not much of a recipe below, but just a few things I like to include on a tasty sandwich.

Servings: 4

8 meatballs in tomato sauce, recipe HERE
4 long rolls, sliced
1/4 cup grated parmesan cheese
1 cup shredded mozzarella cheese

1. Preheat the broiler on High. In a medium saucepan over medium heat, warm the sauce and meatballs until heated through.

2. Sprinkle 1/4 cup of shredded mozzarella cheese into each sliced roll and place on a baking sheet. Place under the broiler for 3-4 minutes or until cheese starts to bubble and the edges of the roll start to brown. Putting the cheese in the bottom of the sandwich will help keep the good stuff (meatballs and sauce) from oozing out when you take a big bite.

3. When meatballs are warmed through, cut each one in half and place 3-4 halves on each roll, depending on the size of your rolls. Pour extra sauce over top, if desired. Sprinkle each sandwich with a tablespoon of parmesan cheese and serve.
